2 ZUCCHINI, cut into 1/4” rounds
½ C FLOUR
2 EGGS, lightly beaten
2 C PANKO
½ C GRATED PARMESAN CHEESE
KOSHER SALT & FRESH CRACKED PEPPER, to taste
VEGETABLE OIL, for frying
1 ½ C HELLMAN’S MAYO
2 t GARLIC, minced
2 T FRESH LEMON JUICE
KOSHER SALT & FRESH CRACKED PEPPER, to taste
Set up a dredging station by placing the flour in one shallow dish (add salt and pepper to season the flour and stir) place the beaten eggs in another and the panko and parmesan cheese in a third (stir to combine.) Toss the zucchini rounds in the flour, shake off excess, then into the egg wash, again shaking off excess and finally press to coat both sides in the panko and parmesan cheese mixture. Place each piece on a cooling rack set over a sheet pan to set. In a large shallow saute pan set over medium high heat, add approximately ¼” oil and heat to 325 degrees. Place each zucchini round in the hot oil and fry for about 3 minutes per side, until golden brown. Drain on paper towel and serve with aioli.
In a small bowl combine the mayo, garlic and lemon juice. Season to taste with salt and pepper. Dip the fried zucchini bites into the aioli and enjoy!
