WATERMELON CUCUMBER COOLER

1 CUCUMBER, peeled and sliced
1 BOTTLE VODKA (I like Smirnoff for this, a good price point and a great product)
1 PINT BLUEBERRIES, garnish
1 C WATER
1 C SUGAR
1 WATERMELON, discard rind and cube flesh
3 C JERO SWEET & SOUR COCKTAIL MIX

Place the peeled and sliced cucumber in a large pitcher and add the vodka. Let sit in the refrigerator overnight. Place the blueberries in a single layer on a baking sheet and freeze overnight.

In a small saucepan, add the water and sugar and set over high heat. Stir until sugar dissolves and mixture comes to a simmer. Remove from heat and refrigerate overnight.

Strain the cucumber from the vodka and discard the cucumber. Place the vodka in a large pitcher. Place the cubed watermelon in a food processor and puree. Place a strainer over a large bowl and strain the pureed watermelon into the large bowl, discarding any solids. Add the watermelon juice to the cucumber vodka. Then, add the simple syrup and the sweet & sour cocktail mix, stirring to combine. Add the frozen blueberries just before serving. Serve in a cocktail glass over ice.
