CLASSIC TUNA MELTS
Makes 4, open face tuna melts
2, 5OZ CANS SOLID WHITE ALBACORE TUNA IN WATER, drained
¼ C CELERY, finely chopped
1/8 C + 1 T RED ONION, finely chopped
½ C MAYONNAISE
1 t LEMON JUICE
1 T CAPERS
4 THICK SLICES OF SOURDOUGH BREAD
OLIVE OIL
½ C SHREDDED SWISS CHEESE
½ C SHREDDED MOZZARELLA CHEESE
KOSHER SALT & FRESH CRACKED BLACK PEPPER, to taste
In a medium sized bowl, add the tuna, celery, red onion, mayo, lemon juice and capers. Fold gently with a rubber scraper until combined and season to taste with salt and pepper.
Drizzle the slices of sourdough with olive oil and place in a large sauté pan set over medium high heat. Toast the bread on both sides until golden brown.
Place the toasted bread on a sheet pan. Divide the tuna salad among the 4 slices and spread evenly. Combine the swiss and mozzarella cheese and sprinkle atop tuna salad.
Preheat the broiler. Place the sheet pan under the broiler and toast until the cheese is golden brown and melted.
