4, 1# BAKING POTATOES
8 T UNSALTED BUTTER, melted
4 OZ CREAM CHEESE, softened
1/2 C SOUR CREAM
1/2 C HEAVY CREAM
KOSHER SALT & FRESH CRACKED PEPPER, to taste
Rinse potatoes and pierce with a fork. Place potatoes in a 350 degree oven and bake until soft 1 ½ - 1 3/4 hours, depending on size. Cut potatoes horizontally and scoop out the flesh into a large bowl. Leave a small amount of potato around the skin to maintain a shape. Place the empty shells on a baking sheet.
Add the melted butter, cream cheese, sour cream and heavy cream to the potatoes. Fold gently and season to taste with salt and pepper. Return the seasoned potato mixture to 6 of the shells. Return to 350 degree oven and bake for 20-25 minutes. Place the potatoes under the broiler and broil for 3-5 minutes or until golden brown spots have formed.
