1/3 C LIME JUICE
2 t GARLIC, minced
2 T SOY SAUCE
1 t GINGER, minced
1/3 C OLIVE OIL
KOSHER SALT & FRESH CRACKED PEPPER, to taste
¼ C FLOUR
1 EGG
¼ C PANKO BREADCRUMBS
¼ C BLACK & WHITE SESAME SEEDS
2- 8OZ AHI TUNA STEAKS
1 T OLIVE OIL
4 OZ MIXED GREENS
Asian Vinaigrette: Whisk together lime juice, garlic, soy sauce and ginger in a small bowl. Stream in olive oil while whisking and season to taste with salt and pepper. (Can be made two days in advance.)
Place flour in a shallow bowl. In a second shallow bowl, whisk egg. Combine breadcrumbs and sesame seeds and place in a third bowl.
Season tuna steaks with salt and pepper. Dredge in flour, shaking off excess, then dip in egg mixture and then press tuna steaks into breadcrumb mixture coating all sides.
Add olive oil to sauté pan set over medium heat. Add tuna steaks and sear, 3 minutes per side or to desired temperature. Remove from heat and let rest for 5 minutes. Add vinaigrette to warm sauté pan and swirl, warming the garlic and ginger, for one minute.
Divide mixed greens among 2 plates and top each with one tuna steak. Drizzle with Asian vinaigrette.
