1 WHOLE BEEF TENDERLOIN, trimmed (4# average)
¼ C OLIVE OIL
KOSHER SALT & FRESH CRACKED PEPPER, to taste
Place the beef tenderloin on a baking sheet. Rub with olive oil and season with salt and pepper. Bake in a 250 degree oven for one hour. Remove from the oven and let rest for 10-20 minutes. Transfer the beef tenderloin to a cutting board. Slice and serve over your favorite sauce.
