PUMPKIN PIE TRUFFLES
Makes 20

Recipe adapted from www.sallysbakingaddiction.com 

2 OZ CREAM CHEESE
2 T POWDERED SUGAR
1/3 C PUMPKIN PUREE
1 3/4 C GRAHAM CRACKER CRUMBS
1/2 t PUMPKIN PIE SPICE
1/2 t GROUND CINNAMON
4 OZ WHITE CHOCOLATE, melted

24 OZ VANILLA FLAVORED ALMOND BARK 
GOLD SPRINKLES, garnish

Place cream cheese and powdered sugar in a medium sized bowl and blend with a hand held mixer until smooth. Add remaining ingredients and mix until combined. Place in refrigerator for at least 1 hour until chilled.

Using a one tablespoon measuring spoon, scoop the mixture and form into 20 balls. Place balls on a parchment lined baking sheet and return to the refrigerator for another hour.

​Melt the almond bark in a microwave safe bowl. Prepare another baking sheet lined with parchment paper. 

Remove the balls from the refrigerator and dunk into the melted almond bark, one at a time, remove with a fork and place on fresh parchment paper. Garnish immediately with sprinkles. Leave at room temperature until set.
