1 C RED ONION, small dice
1 ½ C GREEN PEPPER, small dice
½ C MAYONNAISE
2 T HORSERADISH
4 T DIJON MUSTARD
2 SHEETS PUFF PASTRY, thawed
8 OZ PROVOLONE CHEESE, sliced
1# DELI-STYLE ROAST BEEF, thinly sliced
In a medium saucepan set over medium heat, add red onion and saute for 3-5 minutes or until slightly tender. Remove from heat, place in a bowl to cool and add green pepper.
In a small bowl combine mayonnaise, horseradish and Dijon mustard. Set aside.
Unfold one sheet of the puff pastry. Roll to 12”x10”. Spread ½ of the mayonnaise mixture evenly on the pastry. Lay ½ of the slices of the provolone atop the pastry then use ½ of the roast beef and distribute evenly. Sprinkle ½ the onion and pepper mixture atop the beef. Press gently and then roll up the pastry forming a long ‘jelly roll.’ Wrap in plastic wrap and refrigerate at least 4 hours or overnight. Repeat entire process with the second piece of puff pastry.
Preheat oven to 400 degrees. Cut each roll into 14 pieces and place on a baking sheet lined with parchment paper. Bake until golden brown about 20-25 minutes.
