NO-BAKE KEY LIME PIE

2 C GRAHAM CRACKER CRUMBS, finely ground
7 T UNSALTED BUTTER, melted
5 T SUGAR
¼ t SALT
8 OZ CREAM CHEESE, softened
14 OZ SWEETENED CONDENSED MILK
¾ C KEY LIME JUICE
4 DROPS GREEN FOOD COLORING
3 DROPS YELLOW FOOD COLORING
4 OZ COOL WHIP
1 C HEAVY WHIPPING CREAM
4 T POWDERED SUGAR
1 t VANILLA BEAN PASTE
1 LIME zested, for garnish
Place graham cracker crumbs, melted butter, sugar and salt in a bowl and stir to combine. You may want to run your fingers through the mixture to ensure there are no lumps. Divide the mixture among 12 small mason jars. Press gently with a muddler or the end of a spoon to create an even layer.
In another large bowl, using a hand held mixer, beat the softened cream cheese until smooth. Add sweetened condensed milk, key lime juice and food coloring and beat until blended. Fold in the Cool Whip and divide mixture among the mason jars atop the crust.
In a medium sized bowl, add cream and beat until soft peaks are beginning to form. Add powdered sugar and vanilla bean paste and beat until just combined and stiff peaks have formed. Divide the whipped cream among the key lime tarts and garnish with lime zest
