2T LEMON JUICE
1 T CHAMPAGNE VINEGAR
1/2 T DIJON MUSTARD
1/4 C OLIVE OIL
KOSHER SALT & FRESH CRACKED PEPPER, to taste
Place all of the ingredients in a Tupperware container and cover tightly. Shake vigorously until the vinaigrette emulsifies and looks ‘cloudy.’ Season generously with salt and pepper. You can add 2 teaspoons of fig jam and substitute the lemon juice for orange juice to make a delicious alternative.
