2 C WATER
2 C SUGAR
1/3 C PEAR LIQUEUR
¼ C LEMON JUICE
2 t LEMON ZEST
LEMON SLICES, garnish
Peel the pears, remove the core and cut them into 1” pieces. Combine water and sugar and place in a medium sized saucepan and bring to a boil over high heat, stirring until the sugar dissolves. Add the pears and reduce the heat to medium. Cook pears for 10 minutes. Remove from heat and add pear liqueur, lemon zest and juice and place mixture in a bowl and refrigerate until cold. Transfer mixture to an ice cream/sorbet maker and process according to manufacturer’s suggestions. Place sorbet in plastic container and freeze. Serve in a chilled martini glass or ice cream dish and garnish with a slice of fresh lemon. (Can be made two days in advance.)
