GOAT CHEESE BRUSCHETTA WITH MACERATED TOMATOES
1 LOAF (13oz) FRENCH BAGUETTE, cut on a bias into appx. 30 slices
1/4 C OLIVE OIL
2 GARLIC CLOVES
12OZ CREAM CHEESE, softened
8OZ GOAT CHEESE, softened
¼ C CHIVES, minced
KOSHER SALT & FRESH CRACKED PEPPER, to taste
1 PT RED CHERRY TOMATOES, halved
1 PT YELLOW CHERRY TOMATOES, halved
¼ C RED ONION, minced
3 T BASIL, minced
2 T CHIVES, minced
2 T OLIVE OIL
1 ½ T BALSAMIC VINEGAR
1 T CHAMPAGNE VINEGAR
Preheat oven to 350 degrees. Place slices of baguette on a baking sheet. Drizzle with olive oil and bake for 10 minutes or until lightly toasted. Remove from the oven and while warm, rub each slice of baguette with the fresh garlic.
Place the cream cheese, goat cheese and chives in a medium bowl and beat with an electric mixer until smooth. Season to taste with salt and pepper.
In another bowl, add the tomatoes, onion, herbs, olive oil and vinegars. Season to taste with salt and pepper. Both of these mixtures can be made one day in advance.
Spoon the tomato mixture on to the center of a large platter. Top each slice of baguette with some of the cream cheese mixture, then place them around the tomatoes. Serve with a spoon so guests can top the baguette slices with as many tomatoes as they wish.
