FIG SIDECAR

2 PARTS                BRANDY (OR YOU COULD USE COGNAC AS WELL)
1 PART                  FIG SIMPLE SYRUP
  • 1/3 C FIG JAM
  • 1 CUP SUGAR
  • 1 CUP WATER
COMBINE ALL INGREDIENTS IN A SMALL POT SET OVER HIGH HEAT, WHISKING UNTIL COMBINED. BRING TO BOIL, THEN LET COOL. (you can make this up to 1 week in advance, keep refrigerated.)

½ PART                 FRESH LEMON JUICE
1 PIECE                 ORANGE PEEL, GARNISH (peel just the outside of the orange with as little of the white as possible, then twist the peel over the drink to release the oils)
1 SPRIG                FRESH ROSEMARY, GARNISH
 
IN A SMALL ROCKS GLASS, ADD ONE LARGE CUBE OF ICE. POUR THE BRANDY, FIG SIMPLE SYRUP AND LEMON JUICE OVER THE ICE AND STIR. GARNISH WITH ORANGE PEEL & ROSEMARY.
