COCONUT LIME SORBET

4 servings
1 C                        SUGAR                      
1 C                        WATER
1, 13.5 OZ CAN   COCONUT MILK 
1/4 C                   RUM
1/4 C                   FRESH LIME JUICE
                            4 LIME SLICES, garnish               
 
Combine sugar and water in small saucepan and set over high heat, stirring constantly until mixture comes to a simmer and all the sugar has been dissolved. Remove from heat and pour into medium bowl. Add coconut milk, rum and lime juice. Whisk to combine and chill in refrigerator overnight. Pour into an ice cream/sorbet maker. Process according to the manufacturer’s suggestions. Transfer mixture to a storage container and freeze. Serve in cocktail glasses with a slice of lime for garnish.
