1 T GARLIC (about 3-4 cloves)
1 JALAPENO, stem removed (remove membrane and seeds if you would like it to taste milder)
1 ½ T CHAMPAGNE VINEGAR
¾ C FRESH CILANTRO, rough chop (about 1 bunch)
1/3 C LIME JUICE
¼ C OLIVE OIL
KOSHER SALT & FRESH GROUND BLACK PEPPER, to taste
Place all ingredients in a blender and puree until smooth. Season to taste with salt and pepper and serve over chicken, shrimp, pork or grilled vegetables.
