Watermelon Cucumber Cooler The perfect summer cocktail. Fruity, refreshing and fun! Serves 8 Ingredients: 1 ENGLISH CUCUMBER, peeled and sliced, 1 BOTTLE VODKA, ½ PINT BLUEBERRIES, garnish, 1 C WATER, 1 C SUGAR, 1 WATERMELON, discard rind and cube flesh, 3 C JERO SWEET and SOUR COCKTAIL MIX. Instructions: Place the peeled and sliced cucumber in a large pitcher and add the vodka. Let sit in the refrigerator overnight. Place the blueberries in a single layer on a baking sheet and freeze overnight. In a small saucepan, add the water and sugar and set over high heat. Stir until sugar dissolves and mixture comes to a simmer. Remove from heat and refrigerate overnight. Strain the cucumber from the vodka and discard the cucumber. Place the vodka in a large pitcher. Place the cubed watermelon in a food processor and puree. Place a strainer over a large bowl and strain the pureed watermelon into the large bowl, discarding any solids. Add the watermelon juice to the cucumber vodka. Then, add the simple syrup and the sweet and sour cocktail mix, stirring to combine. Add the frozen blueberries just before serving. Serve in a cocktail glass over ice.
